Now that asparagus is available cheaply in the store, we can highly recommend making this dish that is cooked in a package in the oven.
Serve with an aioli and/or basil mayonnaise and a green mixed salad and dinner is complete.
Salmon in package should have 20-25 minutes in the oven and have about 15 minutes of preparation time before then. This is how you do
INGREDIENTS for 4 people
- 600g fresh salmon in one piece (or 4 pieces) – skin and boneless
- 500g asparagus
- 2 lemons (grated peel and juice of one and slices of the other)
- 50 g butter
- Super salt
- White pepper
- a pot of basil
- 2 dl mayonnaise – make it yourself och chosse a fullfat produce from your local store
- Salad – eg arugula, mache or other mixed green salad
WORK MATERIALS
- Oven – 180 degrees celcius hot air or 200 degrees conventional oven
- 2-3 baking sheets
- Ovenproof dish or baking sheet
- Cheese slicer for the butter
- Knife to cut lemon
- Grater for grated lemon
- Blender to mix basil and mayonnaise
How to do this
- Start by laying out the 2 or 3 baking sheets slightly covering each other in the ovenproof dish/baking tray. You want the covered surface to be so big that you can fold the excess over asparagus and salmon and form a closed package (easier than it sounds)
- Rinse and dry the asparagus
- Break off the woody part at the bottom
- Place asparagus in a row on the baking sheet
- Salt and pepper lightly
- Be sure to remove the skin from the salmon and place it on top on the asparagus
- Drizzle lemon zest and lemon juice over the salmon
- Salt and pepper
- Spread the lemon slices over the salmon
- Make butter slices and distribute at the top of the asparagus, salmon and lemon slices
- Fold the ends of the baking sheet over the salmon and do the same lengthwise
- If you can’t get it together so it stays put, you can use strings or silicone laces as you can see i used in the picture above
- Put it in the oven for 20 – 25 minutes – if you want to make sure it is ready – use a frying thermometer and remove when it is 48 degrees celcius in the centre
- While the salmon package is in the oven, prepare the salad and mayonnaise
- The easiest way to make the mayonnaise is by taking the basil pot and easily cutting off the lower part. then take the stems and leaves and put in a mixer together with a hefty dollop of mayonnaise. Mix, and then mix with the rest of the mayonnaise and you’ll have a lovely fine green and tasty basil mayonnaise to eat for your salmon in package.
