
The beetroot sallad you can buy in the stores are often packed with sweetenters (both natural and artificial). Here is a homemade recipe that should be more friendly to a sugar-sensitive body and brain. And if you know that beetroot is a trigger – i recommend you to skip this one.
- 300g peeled beetroot
- 1 tbsp salt
- 2 dl mayonnaise
- 1 tsp mustard,
- Season with salt and pepper
- Start by boiling the peeled beetroots for 20 – 30 minutes in salted water, they are ready when they are soft all the way through (test with a stick)
- Drain off the water and let them rest a while to cool of
- Mix mayonnaise and mustard
- Chop the cold beetroot into desirable pieces of your liking
- Mix and season with salt and pepper
