First out is her amazing fish soup that she made on a cold winter day when she looked in the fridge and sought inspiration among what was there.
Fish soup Kajsa Varg (made by Maarit Larsson)
Ingredients for 2 servings:
- 2 cm finely chopped leek
- 1/2 tsp chopped red chilli, frozen
- 1 sliced scalott onion
- 4 sliced Brussels sprouts
- 4 bouquets chopped cauliflower
- 2 finely chopped tomatoes
- 2 large mushrooms roughly chopped
- 2 salmon fillets (sliced in suitable pieces)
- 2 cod fillets (sliced in suitable pieces)
- 1 dl peeled prawns
- 5-7 dl cream (full fat)
- White pepper, salt, dill, squeezed lemon
This is how you do it:
- Fry the vegetables shortly in olive oil.
- Put in the fish and pour on as much cream that it covers everything
- Season with spices
- Simmer for about 5-8 minutes
- Put the soup in two plates and garnish with prawns
