The juicy chicken
- 4 chicken steaks (usually 4 chicken legs, without bones and with skin left on it). If you cannot find that – Pick the pieces of the chicken that are availalbe to you and that you like to eat.
- 1 lemon (grated peel and juice)
- 1 clove of garlic
- 1 dl olive oil
- 2 tsp salt
Broccoli salad
- 800g fresh broccoli
- 2.5 dl mayonnaise (look for whole fat or amke your own)
- 1 dl almonds
- 1 lemon (grated shell and juice)
- 1.5 – 2 tsp salt
- 200g cherry tomatoes
- Some roasted almond shavings
Herbal oil
- 2 dl coldpressed extra virgin olive oil
- 1/2 pot basil
- 1/2 pot thyme
- 1/2 pot chives
- 1 clove of garlic
Here’s how:
- Marinate the chicken a day in advance for best results
- Mix the oil, lemon zest, juice, squeezed garlic and salt in a bag
- Put your chicken steak with skin and everything in the bag and massage the oil into the meat
- Push the air out of the bag as best you can and seal the bag.
- Let the chicken marinate overnight in the fridge
- Also mix the herb oil a day in advance
- Put the herbs and garlic in a blender
- Pour in a small splash of oil
- Mix till it becomes a smooth green mass
- Shake/mix with the remaining oil in a jug or bottle
- Place chilled and shake before serving
- Broccoli salad:
- Roast the almonds lightly on a dry frying pan
- Then mix to coarse flour and set aside
- Clear the broccoli and cut off the stalks (save them to shred and fry with freshly chopped garlic and with a little sesame oil some other day)
- Split the broccoli head in small bouquets that are edible straight off
- Divide the cherry tomatoes in half or quarter.
- Mix the mayonnaise with salt, lemon zest and juice and the ground roasted almond
- Stir the broccoli, tomatoes and mayonnaise
- Add some toasted almond shavings
- Fry or grill chicken the steaks and serve with the herb oil and broccoli salad
